For Rice:
1 cup: Basmati rice
4 cups: water
2 small: cardamom
2 large: cardamom
4: Clove
4 to 5 whole black peppercorns
1 inch: cinnamon
1: bay leaf
2 sticks: mace

Ingredients for frying onions and nuts

1 cup small: onion

2 small: cardamom
4-5: Clove

1: bay leaf

1 ½ tbsp Ginger paste
1 ½ tbsp Garlic paste
2: Green Chilli
1 medium onion
1: Carrot
½ cup: Green beans
½ cup Cauliflower
1/3 cup: Capsicum
1: Potato
½ cup: peas
to taste: salt
2-3 tbsp: Red chili powder
½ tbsp: Turmeric
2 tbsp: Coriander powder
1 tbsp: garam masala or biryani masala
Kasoori Methi – 2 tbsp: Kasoori Methi
½ cup Tomato Onion
1 tbsp finely chopped: Coriander leaves
1 tbsp: Mint leaves
1/3 cup: Curd
Some: Saffron
2-3 tbsp: Milk
1 Tablespoon: Rose water
2 tbsp: Ghee
Hyderabadi Veg Biryani Recipe
To make Hyderabadi Dum Veg Biryani, first of all wash the rice.
Now soak it in water for 20-25 minutes.
When the rice gets soaked, add bay leaves, big cardamom, small cardamom, cloves and salt as per taste and boil it.
Then when the rice is cooked to 2/3 part, turn off the gas and let the rice cool down, while boiling the rice, keep in mind that do not cook them completely, remove them only when they are slightly hard, only then the biryani will be good.
After this, wash carrots, cabbage, capsicum, potatoes and beans and cut them into small pieces and also finely chop onions and tomatoes.
Simultaneously, peel, wash and grate the ginger and grind the tomatoes to make a puree.
Now to cook rice, put water in a big vessel on high flame on the gas.
Now as soon as the water comes to a boil, add all the standing spices, salt and rice to it and let it cook for five minutes and filter all the water immediately.
After this, after washing the cooked rice with cold water, let it remain in the strainer for five minutes so that excess water comes out.
Then spread the cooked rice in a plate and take out the standing spices after selecting them.
After this, now put a pan on the gas and add milk to it and heat it slightly and put saffron in it and add curd and rose water to it.
Then put a pan on the gas and put oil in it and heat it.
Now when the oil becomes hot, add onion to it and fry till it becomes golden brown and then take it out in a paper towel lined plate.
After this, put almonds and cashews in the remaining oil and roast it till it becomes light golden and keep it out.
How to make Vegetable Gravy
Pour oil in a pan and keep the flame on medium.
Now add whole spices to this hot oil and fry for a minute. Then add cumin seeds and let it crackle and now add ginger paste, garlic paste and green chillies and fry for a few seconds.
After this, add all the vegetables, tomato puree, salt and all the spice powders, mix it well and cover the pan and cook till the vegetables become soft.
Then add finely chopped coriander and mint leaves to it and mix.
Veg Biryani Recipe
For this, take a thick bottomed pan and apply ghee on the bottom.
After this, keep the layers of Biryani in this order like Rice 1/3 part, half vegetable, rice 1/3 part, half curd, saffron mixture, half dry fruits and fried onion, remaining vegetable, remaining rice, curd saffron Add the mixture, nuts, fried onions and mint leaves in the same order again. You mix two spoons of curd in it. Avoid curd if you do not like it.
Then cover the pan with aluminum foil or napkin and put a tight lid on top of it.
